About the Course:

This advanced 2-month course focuses on the science, diagnosis, and nutritional management of food allergies, intolerances, sensitivities, and immune-related digestive disorders. Students learn immune mechanisms, IgE vs non-IgE reactions, histamine intolerance, celiac disease, lactose intolerance, gluten sensitivity, and food chemical reactions.

The course blends clinical nutrition, immunology, and functional medicine to train learners in elimination diets, food challenge protocols, gut repair, and immune-balancing strategies.

Through case studies, students gain confidence in managing diverse allergic conditions and designing personalized diets that reduce inflammation, restore gut integrity, and prevent flare-ups.

Course Objectives :

  1. To understand immune mechanisms behind food allergies and intolerances.
  2. To differentiate between IgE, non-IgE, and mixed reactions.
  3. To teach elimination, reintroduction, and oral challenge protocols.
  4. To support clients with celiac disease, gluten sensitivity, and lactose intolerance.
  5. To explore histamine intolerance and low-histamine diets.
  6. To study gut permeability and microbiome involvement.
