Recipe Instructions
1. Prepare the quinoa
Rinse the quinoa thoroughly. Cook it in water according to the package instructions until tender, then set aside.
Why? Cooking the quinoa before stuffing helps ensure that the filling is thoroughly cooked and has a consistent texture.
2. Prepare the bell peppers
Wash the bell peppers, cut them lengthwise, and remove the seeds and inner membranes.
3. Prepare the filling
Heat half the olive oil in a pan. Add the onion and garlic and sauté briefly. Add the chopped tomato, corn, black beans, cumin powder, paprika, black pepper, and salt.
4. Add the quinoa
Mix the cooked quinoa into the bean and vegetable mixture. Add lemon juice and coriander, then stir gently.
5. Fill the peppers
Arrange the pepper halves in a lightly greased baking dish. Spoon the quinoa and black bean mixture evenly into each half.
Chef’s Tip: Avoid overfilling the peppers, as this can make the filling spill out during baking.
6. Bake until tender
Preheat the oven to 190°C (374°F). Cover the baking dish loosely with foil and bake for approximately 20 minutes. Remove the foil and bake for another 5–10 minutes, until the peppers are tender and the filling is heated thoroughly.
7. Serve
Allow the peppers to cool slightly before serving.
