Established nutritional principles based on the nutrient composition of legumes, sweet potatoes, and whole-wheat products. Individual clinical outcomes may vary.
Clinical Application
Black beans provide plant-based protein, fiber, and folate. Sweet potatoes contribute carbohydrates, fiber, and beta-carotene, while whole-wheat wraps provide additional carbohydrates and fiber. Combining these ingredients with vegetables creates a convenient meal that can be adapted to individual energy and carbohydrate requirements.
ABOUT THIS RECIPE(Approximate values per serving.
)
Sweet Potato & Black Bean Stuffed Wrap is a nutritious savory preparation made with mashed sweet potato, cooked black beans, fresh vegetables, and aromatic spices, all wrapped in a whole-wheat roti or tortilla.
The legumes provide protein and fiber, while sweet potato supplies energy and beta-carotene. Fresh vegetables contribute additional micronutrients and texture. A simple yogurt-based dressing adds flavor and can contribute extra protein.
This recipe can be incorporated into balanced meal plans for individuals with PCOS, diabetes, or weight-management goals. As sweet potato and the wrap both contribute carbohydrates, portion size and the overall meal composition should be individualized.

Recipe Instructions
1. Prepare the sweet potato
Boil or steam the sweet potato until tender. Allow it to cool slightly, peel, and mash it with a fork.
Why? Cooking softens the sweet potato and makes it easy to combine with the other filling ingredients.
2. Prepare the black bean filling
Heat the olive oil in a non-stick pan. Add the chopped onion and capsicum and sauté for 2–3 minutes.
3. Add the beans and spices
Add the cooked black beans, mashed sweet potato, cumin powder, black pepper, paprika, and salt. Mix well and cook for another 3–4 minutes.
4. Add freshness
Switch off the heat and mix in lemon juice and chopped coriander leaves.
Chef’s Tip: Lightly mash a few black beans into the sweet potato mixture to help the filling hold together.
5. Prepare the yogurt dressing
Combine plain yogurt, lemon juice, roasted cumin powder, chopped mint, and salt in a small bowl. Mix until smooth.
6. Assemble the wraps
Warm the whole-wheat rotis or tortillas in a pan. Arrange shredded lettuce and a portion of the bean and sweet potato filling over each wrap.
7. Add the dressing and roll
Drizzle the yogurt dressing over the filling. Fold in the sides and roll each wrap firmly.
8. Serve
Serve immediately, or lightly toast the assembled wraps on a pan until the outside is crisp.
Include a suitable portion of black beans and vegetables, and adjust the wrap and sweet potato portions according to individual energy needs.
Diabetes Friendly
Monitor total carbohydrates from the wrap, sweet potato, and beans. Consider a smaller wrap and additional non-starchy vegetables if appropriate for the prescribed meal plan.
Weight Management
Use a measured amount of oil and dressing. Adjust the wrap size and filling portions according to individual energy requirements.
Sports Nutrition
Increase the filling or pair the wrap with a suitable protein source when additional energy and protein are required for training and recovery.
Pregnancy
Wash vegetables thoroughly, use properly cooked beans, and prepare the yogurt dressing with pasteurized yogurt. Maintain appropriate food hygiene.
Child Friendly
Reduce the spices, mash the filling thoroughly, and cut the wrap into manageable portions according to the child's age and chewing ability.
Recipe Tip
Prepare the bean filling in advance and refrigerate it promptly in a covered container. Assemble the wrap shortly before eating to prevent the roti from becoming soggy.
Serving Suggestion
Serve one wrap with extra salad or plain yogurt, adjusting the portion and accompanying foods to individual nutritional requirements.
