ABOUT THIS RECIPE(Approximate values per serving. )

Barley & Mixed Vegetable Khichdi is a one-pot meal made with pearl barley, split yellow moong dal, carrots, peas, beans, and mild spices. The ingredients are simmered together until tender, creating a soft, hearty preparation.

Barley contributes complex carbohydrates and soluble fiber, while moong dal provides protein and other nutrients. The recipe can be adapted to individual energy needs and preferences by adjusting the grain-to-lentil ratio and vegetable selection.

Recipe Instructions

  1. 1. Rinse the barley and dal
Wash the barley and moong dal thoroughly. If time permits, soak the barley for 30 minutes.
Why? Soaking may reduce cooking time and helps the grains cook more evenly.
  2. 2. Prepare the aromatics
Heat oil in a pressure cooker or heavy-bottomed pot. Add cumin seeds, onion, and ginger. Sauté for 2–3 minutes.
  3. 3. Add the vegetables
Add carrot, peas, beans, and tomato. Stir in turmeric, black pepper, and salt.
  4. 4. Add the barley and dal
Mix in the rinsed barley and moong dal. Add water and stir well.
  5. 5. Cook until tender
Pressure-cook according to the appliance instructions, or simmer in a covered pot until the barley and dal are thoroughly cooked. Add more water if necessary.
Chef’s Tip: Barley generally takes longer to soften than rice. Check the texture before serving and add extra cooking time if needed.
  6. 6. Adjust the consistency
Stir the khichdi and add hot water if a softer consistency is preferred.
  7. 7. Serve
Garnish with fresh coriander and serve warm.
