CLINICAL DIETITIAN'S NOTES
Clinical Objective
To provide a protein-rich meal containing fish, vegetables, and a measured amount of unsaturated fat.
Best Time to Recommend
Lunch or dinner
Protein-enriched meal plans
Heart-healthy eating patterns
Weight-management meal plans
Meal plans requiring a non-vegetarian protein source
Evidence Level
Established nutritional principles based on the nutrient composition of fish and vegetables. Individual clinical outcomes may vary according to the fish species and preparation method.
Clinical Application
Fish provides high-quality protein. Oily fish, such as salmon or sardines, also provide long-chain omega-3 fatty acids, although the amounts vary by species. Vegetables contribute fiber and micronutrients. Baking helps limit the amount of added fat required during cooking.
ABOUT THIS RECIPE
Baked Fish with Lemon Herb Vegetables is prepared with fish fillets seasoned with lemon juice, garlic, black pepper, and dried herbs. The fish is baked alongside carrots, zucchini, and broccoli until tender and thoroughly cooked.
The recipe offers a practical way to combine protein and vegetables in one meal. The choice of fish affects the nutritional profile, particularly the amount of omega-3 fatty acids and total fat.

Recipe Instructions
1. Prepare the fish
Pat the fish fillets dry and place them in a clean baking dish.
Why? Removing excess surface moisture helps the seasoning adhere and improves the final texture.
2. Season the fish
Combine lemon juice, garlic, black pepper, oregano, paprika, olive oil, and salt. Spread the mixture over both sides of the fish.
3. Prepare the vegetables
Wash and cut the broccoli, carrot, zucchini, and onion. Toss with lemon juice, herbs, olive oil, black pepper, and salt.
4. Arrange for baking
Preheat the oven to 200°C (392°F). Arrange the vegetables around the fish in the baking dish.
5. Bake until cooked
Bake for approximately 15–20 minutes, depending on the thickness of the fish and the type of vegetables. The fish should be opaque and flake easily, reaching a safe internal temperature of 63°C (145°F).
Chef’s Tip: Check the fish early to prevent overcooking. Thicker fillets may require additional time.
6. Check the vegetables
Ensure the vegetables are tender. If they need more time, remove the cooked fish and continue baking the vegetables.
7. Serve
Finish with fresh lemon juice and serve warm.

CLINICAL MODIFICATIONS
PCOS Friendly
Include the fish and vegetables in a balanced meal, adjusting the accompanying carbohydrate portion to individual requirements.
Diabetes Friendly
The fish and non-starchy vegetables provide relatively little carbohydrate. Consider carbohydrates from rice, potatoes, or other accompanying foods.
Weight Management
Measure the oil and adjust the fish portion and side dishes according to individual energy needs.
Sports Nutrition
Pair with rice, potatoes, or another suitable carbohydrate source when additional energy is required for training and recovery.
Pregnancy
Choose fish species that are appropriate for pregnancy, considering local mercury guidance. Avoid high-mercury fish, prevent cross-contamination, and cook the fish completely.
Child Friendly
Remove all bones carefully, use mild seasoning, and serve the fish in small, age-appropriate pieces.
Recipe Tip
For variety, use different herbs or add sliced lemon to the baking dish. Fish species with different fat contents will change the final nutrition values.
Serving Suggestion
Serve with baked vegetables and a suitable portion of brown rice, whole-grain roti, or another carbohydrate source according to individual requirements.
