Recipe Instructions

  1. 1. Rinse the lentils Wash the masoor dal thoroughly under running water and drain. Why? Rinsing removes surface impurities and prepares the lentils for cooking.
  2. 2. Prepare the aromatics Heat olive oil in a saucepan. Add cumin seeds, onion, garlic, and ginger. Sauté for 2–3 minutes until fragrant.
  3. 3. Add the vegetables Add the chopped tomato and carrot, followed by turmeric and black pepper. Cook for another 2 minutes.
  4. 4. Add the lentils Stir in the rinsed masoor dal and add water or vegetable stock. Bring the mixture to a boil.
  5. 5. Simmer until tender Reduce the heat and simmer for approximately 18–22 minutes, stirring occasionally, until the lentils and carrots are soft. Chef’s Tip: Add extra water if the soup becomes too thick. The final consistency can be adjusted to individual preference.
  6. 6. Add the spinach Stir in the chopped spinach and cook for another 3–4 minutes until wilted and thoroughly cooked.
  7. 7. Adjust the texture Blend part of the soup for a creamy texture, or leave it unblended for a more rustic preparation.
