Evidence Level
Established nutritional principles based on the nutrient composition of oats, vegetables, and yogurt. Individual clinical outcomes may vary.
Clinical Application
Oats contribute beta-glucan, a soluble fiber, while vegetables add dietary fiber and micronutrients. Yogurt contributes protein and calcium. Steaming limits the amount of added fat compared with deep-frying.
ABOUT THIS RECIPE(Approximate values per serving.
)
Oats & Vegetable Idli with Coriander Yogurt Dip is a savory preparation made with powdered oats, semolina, plain yogurt, and finely chopped vegetables. The batter is seasoned with cumin and ginger, rested briefly, and steamed in idli moulds until soft and thoroughly cooked.

Recipe Instructions
1. Prepare the oats
Grind the rolled oats into a fine powder and transfer them to a mixing bowl.
Why? Powdered oats help create a uniform batter and distribute the ingredients evenly.
2. Prepare the batter
Add semolina, yogurt, cumin seeds, ginger, salt, and enough water to form a thick, spoonable batter. Allow it to rest for 10 minutes.
3. Add the vegetables
Mix in the grated carrot, chopped capsicum, and fresh coriander leaves.
4. Prepare the idli moulds
Lightly grease the idli moulds with oil. Add the baking soda or fruit salt to the batter just before steaming and mix gently.
5. Steam the idlis
Pour the batter into the moulds and steam for approximately 10–12 minutes, or until a toothpick inserted into the centre comes out clean.
Chef’s Tip: Avoid overmixing after adding the raising agent, as this may reduce the softness of the idlis.
6. Prepare the yogurt dip
Blend or finely mix the yogurt with coriander, mint, roasted cumin powder, lemon juice, and salt.
7. Serve
Remove the idlis carefully and serve warm with the coriander yogurt dip.
Use plain yogurt, include vegetables, and adjust the number of idlis according to individual energy requirements.
Diabetes Friendly
Monitor the portion size and total carbohydrate intake from oats and semolina. Pair with an appropriate protein source if required.
Weight Management
Use a measured quantity of oil and adjust the number of idlis to individual energy needs.
Sports Nutrition
Serve with additional yogurt, paneer, or another suitable protein source when greater protein and energy intake are required.
Pregnancy
Use pasteurized yogurt, wash vegetables thoroughly, and steam the idlis completely.
Child Friendly
Keep the seasoning mild and serve small, soft idlis cut into age-appropriate pieces.
Recipe Tip
For additional variety, add finely chopped beans or grated zucchini. If the batter becomes too thick after resting, add a little water before steaming.
Serving Suggestion
Serve warm with coriander yogurt dip and a side of cooked or fresh vegetables, as appropriate for individual dietary requirements.
