ABOUT THIS RECIPE
Ragi Vegetable Uttapam with Curd Dip is a savory preparation made from ragi flour, yogurt, water, and finely chopped vegetables. The batter is cooked on a non-stick pan until the uttapam is golden on the outside and thoroughly cooked inside.
Ragi provides energy and contributes calcium, while vegetables add variety and fiber. Serving the uttapam with plain curd increases the meal’s protein content and adds a creamy accompaniment.
This recipe offers an alternative to refined-flour breakfast options and can be adapted to different nutritional requirements. Ragi still contains carbohydrates, so portion size is important for people managing blood glucose levels.

Recipe Instructions
1. Prepare the batter
Combine ragi flour, yogurt, salt, cumin seeds, and water in a bowl. Mix until a thick but pourable batter forms. Rest for approximately 5 minutes.
Why?
Resting allows the flour to absorb moisture and helps create a more consistent batter.
2. Add the vegetables
Mix in the chopped onion, tomato, carrot, capsicum, coriander leaves, and green chilli, if using.
3. Heat the pan
Heat a non-stick tawa over medium heat and lightly grease it with oil.
4. Shape the uttapam
Pour a ladle of batter onto the pan and spread it gently into a small, thick circle.
5. Cook thoroughly
Cook for approximately 3–4 minutes until the base is set. Flip carefully and cook the other side until the vegetables soften and the uttapam is thoroughly cooked.
Chef’s Tip:
Ragi batter can be more delicate than conventional fermented uttapam batter. Keep the uttapams small and avoid spreading them too thinly.
6. Prepare the curd dip
Mix the curd with roasted cumin powder, chopped mint or coriander, and salt.
7. Serve
Serve the hot ragi vegetable uttapam with the chilled curd dip.

Sports Nutrition
Pair with a larger protein source, such as paneer or additional curd, when increased protein and energy are required.
Pregnancy
Wash vegetables thoroughly, use pasteurized curd, and cook the uttapams completely.

Weight Management
Use a measured quantity of oil, emphasize vegetables, and adjust the millet and tofu portions to meet individual energy needs.
Sports Nutrition
Increase the millet portion or add another carbohydrate source when energy demands are higher. Adjust tofu and other protein sources according to training needs.
Pregnancy
Use fresh ingredients, wash vegetables thoroughly, and cook the tofu and millet properly. Individual nutritional requirements should guide portion sizes.
