Recipe Instructions
Marinate the paneer with Greek yogurt, paprika, cumin, garlic powder, black pepper and lemon juice for 10–15 minutes. Why?
The yogurt helps keep the paneer soft while improving flavour.
Heat olive oil in a pan and grill the paneer over medium heat until lightly golden.
Chef’s Tip
Avoid cooking over very high heat as paneer may become rubbery.
Prepare the base by placing cooked brown rice in the serving bowl.
Arrange black beans, sweet corn, chopped peppers and cherry tomatoes over the rice.
Add the grilled paneer.
Top with avocado slices, chopped coriander and a spoonful of Greek yogurt. Finish with fresh lemon juice and freshly ground black pepper. Serve immediately.
