Recipe Instructions
1. Wash the millet
Rinse the millet thoroughly under running water. Cook it in water according to the package instructions until tender. Drain any excess water if necessary and set aside.
Why?
Cooking millet until tender creates a suitable base for the bowl and makes it easy to combine with the vegetables and tofu.
2. Prepare the tofu
Pat the tofu dry and cut it into bite-sized cubes.
3. Sauté the tofu
Heat half the olive oil in a non-stick pan. Add the tofu cubes, season with black pepper and a little salt, and cook until lightly golden on the outside. Remove and set aside.
4. Cook the vegetables
Add the remaining oil to the pan. Sauté garlic and ginger briefly, then add onion, carrot, capsicum, and broccoli.
5. Cook until tender
Cook the vegetables for approximately 5–7 minutes, stirring occasionally. Keep them slightly crisp or cook them until softer according to preference.
6. Assemble the bowl
Divide the cooked millet between serving bowls. Add the sautéed vegetables and tofu.
7. Add the finishing touches
Drizzle lemon juice over the bowl and garnish with fresh coriander leaves. Serve warm.
Chef’s Tip:
Cook the millet separately when preparing meals in advance. Refrigerate it promptly in a covered container and reheat thoroughly before serving to make meal assembly quicker on busy days.
